'VIRGINIA CUT' LOMO SALTADO

A classic we’re mighty proud of. Tender local beef strips stir-fried in a hot wok with red onion, tomato, and a touch of Virginia cider vinegar.

'PERÚ-VIRGINIA' DUCK RICE

A beautiful plate. Confit duck leg from a local Virginia farm, served over aromatic green rice, cooked with cilantro, aji amarillo, and a local dark beer.

VIRGINIA COAST CEVICHE

Our house-favorite. Fresh white fish caught locally, marinated in our iconic "leche de tigre," with a hint of Peruvian limo chili. It’s simply perfect.
